: Tuesday , August 7, 2012 Belgian Strong Dark Ale- Biere Noir This summer has really been my summer of brewing Belgians . Given that I don't have tightly controlled fermentation temperatures , it's the perfect time for Belgian yeasts . Every summer I try to brew a stout or something dark that I am not in the mood to drink in the hot months . Given that patience has been a learned process for me over my 8 years of brewing , I found that brewing an RIS or in this case a Belgian Strong Ale in July is perfect for letting sit for several . months I have always wanted to brew a Belgian Strong Ale , I love beers like Unibroue's Terrible or Lost Abbey's 10 Commandments When you look at a Belgian Strong recipe it's great how simple they are with so much character coming from the yeast not unlike
